A favorite of mine at Phong Lan. This recipe comes close, but you have to have good curry.

potatoes
carrots
shallots
celery
zucchini
yellow curry paste
1 can coconut milk
chicken breast, cut into chunks
chicken broth
2 T fish sauce
1 T brown sugar
bay leaf
lemon zest
thai basil

Peel & par-boil potatoes & carrots.

Fry shallots, celery, & zucchini in veg oil, remove.

Fry yellow curry paste (or red curry paste & yellow curry powder, equal portions of each) in same oil.

Add coconut cream & bring to gentle boil.

Add chicken & coat w/ sauce 1 or 2 min.

Add 1/2 - 2 c chicken broth (depending on how much needed), 2 (or 4) T fish sauce, 1 T brown sugar, bay leaf, lemon zest, Thai basil.

Add potatoes, & veggies.

Cook 'til chicken done.

About 1 min before done add juice of 1/2 lemon.

Preparation time: 15 minutes
Cooking time: 20 minutes
