Cowboy Stew

Ingredients

  • 4 slices bacon, chopped
  • 24 oz kielbasa, cut into slices
  • 1 ½ lb ground beef
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 3 T all-purpose flour
  • 1 ½ t salt
  • ½ t pepper
  • 1 t chili powder
  • 14 oz canned diced tomatoes
  • 32 oz baked beans
  • 7 oz canned green chilies
  • 15 oz canned corn
  • 2 russet potatoes, peeled and cubed
  • 1 c water
  • 2 T flat leaf parsley, chopped

Instructions

Brown bacon to crispy in a soup pot. Remove.

Brown sausage. Remove

Add beef, onion, and garlic. Brown beef. Add flour, salt, pepper, and chili poweder. Mix and cook for a minute or two.

Add tomatoes, beans, chilies, corn, potatoes, bacon, sausage, and water. Bring to boil then reduce to simmer. Cover and cook until potatoes are done.

Add water of stew is too thick. Add parsley and adjust seasoning to taste.
