Turkey Chili Mac with Bacon

Ingredients

  • 3 T extra virgin olive oil
  • 1 c white onion, chopped
  • 1 c red bell pepper, diced
  • ½ c Anaheim green chile, diced
  • 2 T garlic, minced
  • 2 lbs lean ground turkey
  • 1 t kosher salt
  • ½ t black pepper
  • 36 oz chicken broth
  • 10 oz Rotel
  • 4 oz tomato paste
  • 2 T ground cumin
  • 1 ½ T chili powder
  • 1/4 t garlic salt
  • 1 packet dry Ranch Dressing Seasoning
  • 4 c cooked Ditalini pasta (slightly underdone)
  • 20 strips cooked crumbled bacon pieces

Instructions

Heat oil in dutch oven. Sauté onion, peppers, chilies. Add garlic when almost done.

Add turkey, salt, and pepper. Cook until browned.

Add remainder of ingredients except the pasta and bacon. Stir and bring to boil. Back off to simmer.

Add pasta and cook to warm throughout.
