1 T extra virgin olive oil
1 carrot, chopped
2 onions, chopped
1 celery stalk, chopped
3/4 lb chicken breast, cut into strips
14.5 oz can crushed tomatoes w/ basil, garlic, & oregano
4 t grated paresan
1 T fresh basil, chopped
1/2 t sea salt
1/4 t pepper
Heat oil in large skillet. Saute veggies until softened (about 10 minutes). Add strips of chicken. Cook until opaque (about 5 minutes). Stir in remaining ingredients and cover. Simmer for 10 minutes.
Cooking time: 30 minutes
