Peri Peri Chicken

Ingredients

  • Marinade
  • 3 cloves garlic, chopped
  • ½ t red pepper flake
  • 1 t smoked paprika
  • ¼ olive oil
  • ¼ lime juice
  • 1 T red wine vinegar
  • 2 - 4 boneless skinless chicken breasts
  • salt
  • pepper
  • 2 c sweet peppers
  • 1 sliced lemon
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

Mix marinade ingredients in blender until smooth.

Season chicken with salt and pepper. Place in zip top bag with marinade. Put in fridge overnight.

Preheat oven to 400°.

Remove chicken from marinade. Reserve marinade.

Heat cast iron skillet over medium high heat. Brown chicken on both sides, but don't cook through. Add marinade and remaining ingredients and shut off heat.

Cover chicken and other ingredients in skillet with parchment paper. Place in oven and cook until done, probably 20 - 30 minutes.

Let chicken rest before serving.
