1/4 c green onions, chopped
1 T butter
2 medium tomatoes, chopped
3 T fresh lime juice
1 oz canned green chiles, chopped
1 T fresh parsley, minced
salt
pepper
garlic powder
4 4-oz orange roughy fillets
4 lime wedges
Saute green onions in butter until tender. Stir in tomatoes, lime juice, green chiles, parsley, and seasonings. Bring to a boil, then reduce heat.
Simmer for 10 minutes, stirring occasionally. Add the fillets and spoon the sauce over the fish.
Cover and simmer for another 10 minutes or until the fish flakes easily. Top with lime wedges.
I usually serve over yellow rice with a nice side salad.
