One Pan Tex-Mex Chicken and Rice

Ingredients

  • Tex-Mex Rice
  • canola oil
  • ½ c white onion, diced
  • 1 green pepper, diced
  • 2 garlic cloves, minced
  • 4 oz can green chiles
  • 1 ½ c corn, drained
  • 1 ½ c black beans, drained
  • salt
  • pepper
  • 1 t cumin
  • chili powder
  • dried oregano
  • red pepper flakes
  • smoked paprika
  • 2 c chicken broth
  • 1 c white rice
  • lime juice
  • cilantro

Instructions

Heat oven to 400 degrees.

Rub creole seasoning and chili powder on chicken.

Heat oil in oven-safe skillet. Cook chicken in skillet, 5 minutes each side.

Place skillet in oven. Bake for 15 minutes, or until done.

Remove skillet from oven, and set aside chicken.

Heat oil in skillet. Saute onion and peppers. Add in garlic, chilies, corn, beans, seasoning and saute.

Add broth and bring to boil. Add rice, cover and cook for 15 minutes, or until rice is done.

Return chicken. Add optional lime juice and cilantro.
