Deconstructed Stuffed Cabbage

Ingredients

  • 1 c white rice
  • 1 lb green cabbage, chopped
  • 2 T olive oil
  • 4 oz bacon, diced
  • 1 c white onion, chopped
  • 2 cloves garlic, minced
  • 2 T red wine
  • 1 lb ground beef
  • 1 lb ground pork
  • 2 c V-8 juice
  • 1 c tomato paste
  • 2 T white wine vinegar
  • 1 T sugar
  • 1 t thyme
  • 1 t paprika
  • 1 t salt
  • ½ t black pepper
  • 1 c drained sauerkraut

Instructions

Cook rice.

Blanch cabbage in boiling salted water for 5 minutes. Drain.

In dutch oven, sauté bacon in olive oil until browned. Increase heat and add onions and cook until softened. Add garlic. When garlic is done, deglaze with the red wine.

Add meat and brown.

Add tomato products, vinegar, sugar, thyme, paprika, salt, and pepper. Reduce to simmer and cook for 5 minutes.

Add sauerkraut, cabbage, and rice. Simmer for 5 minutes. Season to taste.
