Corned Beef & Cabbage

Ingredients

  • packaged corned beef with spice pack
  • russet potatoes, thirds or quartered
  • carrots, 3 inch pieces
  • white onion, quartered
  • green cabbage, quarters or eighths
  • salt
  • adobo seasoning

Instructions

Wash beef. Put in instant pot. Add spice pack contents. Cover completely with water.

Cook at high pressure for 1.5 hours. Allow pressure to release naturally.

Remove from cooker. Beef should be extremely tender. If not, cook some more!

Remove excess fat. Slice thinly.

Place all veggies in liquid in the instant pot. The liquid should be about ⅔ full in the pot. Do not over fill the instant pot. Reduce veggies if necessary.

Season with salt (more may be needed later, do not over season). Add adobo seasoning.

Cook at high temperature for 10 minutes (might need 15 minutes), or use the vegetable setting if available. Release pressure after 5 - 7 minutes of resting.

Season as necessary.
