4 chicken breasts
1/3 c fresh lemon juice
2 t lemon zest
1/3 c white wine
2/3 c olive oil
3 garlic cloves, crushed
3-4 sprigs fresh thyme
salt
pepper
Place chicken breasts in a large zip-lock bag. Mix together remaining ingredients and pour into bag. Refrigerate at least six hours or overnight, turning bag occasionally to remix marinade and make sure all the chicken is exposed.
Prepare the fire -- it should be medium hot. Cook breasts for 4 -6 minutes per side (depending on thickness). The fire will tend to flare up so monitor the breasts to keep them from burning.
