Red Beans and Rice

Ingredients

  • 1 lb red kidney beans, soaked overnight
  • (optional) pork shank, smoke 'em if you got 'em
  • 7 c chicken broth
  • white onion, diced
  • green pepper, diced
  • celery, diced
  • crushed garlic
  • bay leaves
  • hot sauce
  • thyme
  • Creole Seasoning
  • kosher salt (start w/ 1 t, add to taste after cooked)
  • pepper
  • andouille sausage, cut into 1/4" pieces
  • white rice

Instructions

Soak beans overnight.

Add all of the ingredients, aside from the sausage and rice.

Cook for at least 8 hours

Taste and adjust seasoning.

Remove pork shank, shred the meat and add back to the crock pot. Add the sausage and cook for at least 2 hours.

Remove bay leaves and serve over white rice.
