Cuban Shredded Beef

Ingredients

  • 6 whole garlic cloves
  • 2 - 2.5 lbs beef chuck roast or flank steak
  • 1 T canola oil
  • 16 oz cans tomato sauce
  • 1 green pepper, thinly sliced
  • 1 4 oz can green chilies
  • 2 T tomato paste
  • 2 T dried oregano
  • 2 T salt
  • 1 T ground cumin
  • 1 T white vinegar
  • ½ t red pepper flakes
  • ¼ c chopped cilantro

Instructions

Make 3 small X marks in the beef and insert 3 of the garlic cloves. Brown the beef well on all sides.

Chop the 3 remaining cloves of garlic and add them and the rest of the ingredients to the crockpot.

Cook on low for 7 - 8 hours.

Shred the beef. Taste and season as necessary.
