Balsamic Pot Roast

Ingredients

  • 1 T olive oil
  • 4 lbs chuck or blade roast, fat trimmed
  • 2 yellow onions, chopped
  • 8 garlic cloves, smashed
  • 1 lb white or yukon baby potatoes
  • 4 carrots, cut into 2" pieces
  • 2 stalks of celery, cut into 1" pieces
  • ¼ c balsamic vinegar
  • 2 T dijon mustard
  • 1 T brown sugar
  • 2 t thyme
  • 2 t crushed bouillon
  • salt & pepper, to taste
  • 1 c beef broth
  • 2 T flour
  • fresh parsley

Instructions

Season roast with salt and pepper. Sear on all sides, in the slow cooker, if so equipped.

Add the onions, garlic, potatoes, carrots, celery, balsamic, mustard, brown sugar, thyme and bouillon to the crock pot.

Mix beef broth and flour and pour into crockpot.

Cook on low for 8 hours or until beef is falling apart.

Season to taste as necessary.

Balsamic Pot Roast

Ingredients

  • 2.5 - 3 lbs beef chuck roast
  • 3 T apple cidar vinegar
  • 2 T minced garlic
  • 3 chipotle peppers in adobo, chopped
  • 1 white onion, chopped
  • 1 lime, juiced
  • ½ c beef broth
  • 4 t ground cumin
  • 2 t dried oregano
  • ¼ t ground cloves
  • salt to taste

Instructions

Whisk together all ingredients except the roast. Place roast in crock pot and pour mixture over it.

Cook on low for 6 - 8 hours.

Shred and serve with juice.
