This recipe is from Ball Complete Book of Home Preserving, p. 358.

For next time, try removing tomato skins before the 5 minute boil - it was a pain (literally) to peel after the boil. Also, try the other seasoning blends on p.359 (I did the Italian Spice Blend) or some of my seasonings.
